Making simple syrup is necessary for any serious home bartender. Simple syrups are also great mediums for bringing the flavors of botanicals to drinks and desserts. Below is a *simple* recipe for a cassina infused simple syrup. Get sticky with it.

1 qt sugar • 1 qt water • 2 tablespoons dry cassina

Bring water to a light boil and stir in sugar until completely dissolved and the mixture is clear. Remove syrup from heat and add dry cassina. Let steep for 30 minutes, then strain out cassina. I personally use a panty hose, but the refined home chef could use a cheese cloth if they are so inclined. Use syrup in desserts, cocktails, and non-alcoholic mixed drinks. Store in fridge.
